A summer menu signed Caseificio Longo
The meteorological summer has officially begun (and the temperatures of these days confirm it), the astronomical one has not yet, but the solstice is now upon us.
The heat increases the desire for fresh but tasty food, and Caseificio Longo is ready to accompany your summer lunches, dinners and snacks in the name of Piedmontese taste and dairy excellence that, for more than 70 years, we have been proud to export to Italy. and in the world.
Our products lend themselves perfectly to an entire menu with a decidedly summery flavor, from appetizers to desserts.
Before the main courses, therefore, we offer a very fresh cream tomino mousse, quick to prepare and perfect to be personalized with chopped walnuts, basil or mint (the latter definitely recommended for its freshness). As a first course, however, we recommend a good dish to be enjoyed hot or even cold, after a few hours in the refrigerator: a barley salad with peppers and Primosale. A dish with a Piedmontese character as it associates peppers with our first salt, with a fresh and delicate flavor.
The first salt is also the protagonist of the second. What's cooler and more summery than a tuna carpaccio? Better still if accompanied by Primosale cut into thin slices, which enhances the flavor of the fish without covering it.
To finish with a flourish (it really should be said) we propose a cheesecake, a dessert suitable for the whole year but which gives its best in summer, made with our royal Seirass and with a cranberry topping. In this case, however, let yourself be guided by your imagination and seasonal tastes: you could garnish the cheesecake with cherries or apricot compote.
