The Canavese valleys...
Famous not only for their beauty and varying landscape, but also for a range of local products including the tomino - a fresh cheese of ancient origin, still highly appreciated even today for its lightness, digestibility and taste.
The principal home of the Canavese Tomino is Bosconero, a little town with a big passion for cheese-making: an art whose secrets are handed down from father to son, generation after generation. This is exactly what has happened in the Longo family since 1958, when Antonio founded the dairy of the same name. Nowadays it's one of the most important in the area, producing cheeses with just fresh milk selected directly in the surrounding countryside, checked upon its arrival in the dairy, then processed according to the age-old traditions. The Fresh Tomini, Tomini del Boscaiolo, and the Piccola Baita Robiola - cheeses that are ideal for people of every age because they're healthy and light, the Longo Tomini, whose unmistakably delicate flavour satisfies even the most demanding gourmet, can be used in countless recipes for starters or second courses that are fresh, creative and easy to prepare.
